Börek

Börek are little savoury pies made of filo pastry, which you can buy frozen.

Spinach and cheese filling (to make 8 – 10)
¾ lb fresh spinach or ½ lb frozen
2tbs olive oil
small onion finely chopped
1 tbs grated cheese
juice of half a lemon
salt and pepper

Sweat the onion in the oil then add the other ingredients. (Squeeze the water out of the spinach first) Stir well and remove from the heat to cool. To make the Börek, take a sheet of filo and cut into 4 pieces each about 15 x 25 cm. Brush with melted butter and fold lengthways (7.5 x 25 cm). Place a teaspoon of filling about 2.5cm from the edge of the strip and fold into triangular pasties Arrange on greased baking trays, brush with melted butter and bake at 190C, Gas 5 for 30 mins until golden.
