Beetroot and yogurt salad

450g cooked beetroot, skinned and diced
25g butter
1 onion finely chopped
½ pint full fat yoghurt
1 clove garlic, crushed

Melt the butter and sauté the onion until golden. Add the beetroot, stir well and keep warm. Stir the garlic into the yogurt then pour the yoghurt over the beetroot and serve.
