A savoury cobbler can be a topping for a vegetable casserole or any other sort of pie.
8 oz of wholemeal self-raising flour
2 oz of vegetable suet
2 teaspoons mustard powder
4 oz mature cheddar cheese, grated
1 egg, Milk, Salt and pepper
Sift the flour, mustard and seasoning into a bowl and rub the fat in until the mixture looks like breadcrumbs. Stir in the cheese, reserving a little for garnish. Add the egg and enough milk to form a soft dough. Roll this out to a thickness of about half an inch and cut into rounds with a glass or a cutter. Lay these on top of the casserole or stew when it is nearly ready, sprinkle the rest of the cheese on, and replace in the oven. Serve when the crust has risen and browned after about 15 – 20 minutes.
