Tropical Wholefoods is a ‘Fair Trade’ company that distributes sun dried fruit. The dried mango from Burkina Faso is particularly delicious. This is a very simple recipe for a dessert.
100g Organic dried mango
284ml Organic double cream
Soak the mango in a shallow bowl in just enough warm water to cover the fruit. After about 30 minutes, puree the fruit with the soaking water in a food processor. This should produce a stiffish puree, unless you have used too much soaking water. Whip the cream until it thickens but not so much that it forms stiff peaks. Fold the puree into the cream and mix thoroughly, trying not to beat the air out of the cream. Chill in the fridge and serve in glasses.
