Red Onion Marmalade

12 oz red onions very finely chopped
1 oz butter
8 fl oz red wine
2 fl oz red wine vinegar
1 tsp chopped fresh thyme
salt and pepper

Melt the butter in a medium saucepan. Stir in the onion and thyme and let them soften for about 10 minutes. Add the wine and the wine vinegar and bring to a gentle simmer adding salt and freshly milled black pepper. Turn the heat to its lowest setting and let the whole thing cook really slowly with the lid off for about 50 minutes or until all the liquid has evaporated.
