6 x 6-inch buckwheat pancakes (blinis)
14 oz cream cheese blended with 1 bunch of finely chopped chives
1 further bunch finely chopped chives
7 oz thinly sliced smoked salmon
Spread a pancake with some of the cream cheese mixture. Place slices of smoked salmon on the cheese and top with another pancake. Continue with this procedure four more times. With a palette knife, go round the sides, filling any gaps with cheese and coat with the remaining chives. Leave in the fridge to firm up before cutting. Serve with a salad as a starter, cut into wedges. You can use different fillings: a mixture of blue and cream cheese, a smoked fish pâté, etc.
