Fried Carrots in Curd

This recipe also works for parsnip and swede.
4 tablespoons of ghee or cooking oil
1½ lbs carrots cut into ¼ inch sticks
1 inch ginger finely chopped
4 cloves garlic finely chopped
2 teaspoons sesame seeds
2 teaspoons poppy seeds
1 teaspoon turmeric powder
2 teaspoons coriander powder
½ teaspoon paprika or chilli powder
1 teaspoon salt
1 cup yoghurt

Heat the oil and fry the carrots for a few minutes and remove. Put in the ginger, garlic, sesame seeds and poppy seeds and fry till golden. Add the spices and return the carrots and fry for two minutes. Add the yoghurt and cook till the carrots are tender.
