Beany Scotch Eggs

Combine all the Continental and Walnut Loaf mixture ingredients and let the mixture cool. Then you’ll need 4 hardboiled eggs, wholemeal flour, 2 eggs beaten with a tablespoon of cold water, dried breadcrumbs and oil frying. Dip the eggs in the flour and then in the beaten egg. Then press some of the lentil mixture around them so that they are completely covered. Dip the covered eggs into the beaten egg again and roll in dried breadcrumbs. Heat the oil and fry the scotch eggs until they are crisp and golden brown all over (about 10 minutes). Drain on kitchen paper. Serve cut in half with salad and pickles.
