Zucchini alla Virginia

I tsp salt
3 cloves garlic
L tablespoon lemon juice
3 tablespoons chopped parsley (preferably
flat leafed)
ground pepper

Trim the ends off the courgettes and slice them lengthways into ‘chips’ about 1/4 inch by 2 inches. In a large frying pan heat the oil and fry the courgettes a few at a time, turning with a spatula until they are brown on both sides. As they brown transfer them to a plate and sprinkle with salt. When they are all fried prepare the dressing. Grind the garlic cloves into a paste and combine with the lemon juice and parsley. Pour the dressing over the fried courgettes and toss well. Allow to marinate for I hour. Serve at room temperature, passing the pepper mill.
